Strawberry Cake
Quick and Easy moist vanilla based cake loaded with fresh strawberries.

- 2½ cup Plain Flour
- ½ cup Chopped Strawberries
- 1 cup Halved Strawberries
- 1 cup Plain Yoghurt
- ½ cup Oil
- 1 cup Caster Sugar
- 2 Eggs
- 2 tsp Baking Powder
- 1 tsp Vanilla Essence
- Icing Sugar for dusting
Preheat oven to 180°C/350°F (160°C fan). Prepare a baking pan with baking paper.
Add sugar, eggs, yoghurt and oil in a mixing bowl and mix well with a whisk.
Add flour and baking powder and mix untill just combined.
Pour half the mixture in baking pan and scatter diced strawberries. Pour the remaining batter and arrange halved strawberries faced down.
Bake for 40 minutes or untill skewer comes out clean.
Allow it to cool before turning it on the wire rack. Once completely cooled down dust it with icing sugar
