Strawberry Cake

Quick and Easy moist vanilla based cake loaded with fresh strawberries.

Ingredients
  

  • cup Plain Flour
  • ½ cup Chopped Strawberries
  • 1 cup Halved Strawberries
  • 1 cup Plain Yoghurt
  • ½ cup Oil
  • 1 cup Caster Sugar
  • 2 Eggs
  • 2 tsp Baking Powder
  • 1 tsp Vanilla Essence
  • Icing Sugar for dusting

Instructions
 

  • Preheat oven to 180°C/350°F (160°C fan). Prepare a baking pan with baking paper.
  • Add sugar, eggs, yoghurt and oil in a mixing bowl and mix well with a whisk.
  • Add flour and baking powder and mix untill just combined.
  • Pour half the mixture in baking pan and scatter diced strawberries. Pour the remaining batter and arrange halved strawberries faced down.
  • Bake for 40 minutes or untill skewer comes out clean.
  • Allow it to cool before turning it on the wire rack. Once completely cooled down dust it with icing sugar
