Mixed Berry Galette
This mixed berry galette is incredibly delicious, with homemade pastry and combination of strawberries, blueberries and raspberries it is a perfect summer dessert.

- 2½ cups Plain Flour
- 150 g Softened Butter
- ¼ tsp Salt
- Ice Cold Water
Berry Filling
- 2 cups Strawberries (quartered)
- 1 cup Blueberries
- 1 Cup Raspberries
- 4 tbsp Caster Sugar
- 1 tbsp Lemon Juice
- 1 tbsp Corn Flour / Corn Starch
- 1 Egg for Brushing
- 1 tsp Raw Sugar
Pastry
In a bowl combine flour and salt. Add butter using hands or fork mix it together until it forms a crumb.
Gradually add ice cold water (around 1 tbsp at a time) and keep mixing until dough starts to come together and forms clumps.
Dust a clean surface with flour and transfer the dough mixture there.
Start to bring it together and gently knead it until it comes dough is formed..
Cover it with cling wrap and chill it in fridge for 2 hrs.
Take the dough out and rest it at room temperature for 15 mins. Divide the dough into half.
Dust a clean surface with flour and roll it with rolling pin until ¼ inch thick.
Transfer it to a baking tray lined with baking paper.
If you are using store bought pastry thaw it and cut it according to required size.
Assembly
Put berries on the prepared pastry leaving 2 inches on the border on the sides.
Gently fold the border up to the sides and every few inches pinch and fold the pastry.
Lightly beat an egg with dash of milk and brush it on the folded sides of pastry. Sprinkle sugar over it.
