Falafel Salad
Healthy Falafel Salad with chickpeas, couscous and tahini dressing. Vegetarian salad that can be served as side or enjoyed on its own as a wholesome filling meal.

- 8 Falafels
- 1 cup chickpeas boiled or drained
- ½ cup capsicum red, green or both
- 1 small Tomatoe Deseeded and chopped
- 1 small onion
- ½ Cucumber Chopped
- 2 cups Mix green leafy salad
- ½ Avacado Optional
Tahini Dressing
- 2 tbsp Tahini Paste
- 2 tbsp Greek Yoghurt
- 2 tbsp Lemon Juice
- 1 tbsp olive oil
- 1 tbsp Sumac
- Salt to taste
Add all the salad ingredients in a mixing bowl.
In a jar or bottle add dressing ingredients, shake well until combined well.
Pour the dressing into salad and toss to mix.
Add Falafels and serve.
