Falafel Salad

Healthy Falafel Salad with chickpeas, couscous and tahini dressing. Vegetarian salad that can be served as side or enjoyed on its own as a wholesome filling meal.

Ingredients
  

  • 8 Falafels
  • 1 cup chickpeas boiled or drained
  • ½ cup capsicum red, green or both
  • 1 small Tomatoe Deseeded and chopped
  • 1 small onion
  • ½ Cucumber Chopped
  • 2 cups Mix green leafy salad
  • ½ Avacado Optional

Tahini Dressing

  • 2 tbsp Tahini Paste
  • 2 tbsp Greek Yoghurt
  • 2 tbsp Lemon Juice
  • 1 tbsp olive oil
  • 1 tbsp Sumac
  • Salt to taste

Instructions
 

  • Add all the salad ingredients in a mixing bowl.
  • In a jar or bottle add dressing ingredients, shake well until combined well.
  • Pour the dressing into salad and toss to mix.
  • Add Falafels and serve.
