Chilli Lime Chicken
Juicy and tender Chicken marinated in chili and lime, grilled to perfection. Chilli Lime Chicken is a quick and easy recipe which is full of flavour.

- 2 Breast Fillets
- 1/4 cup Lime Juice
- 2-3 Red Chillies
- 4-5 Garlic Cloves
- 1 inch Ginger Piece
- 2 tbsp Soya Sauce
- 1 tbsp Brown Sugar
- 2 tbsp Coriander/cilantro
- 3 tbsp Oil
- Salt (optional)
Split chicken into half by cutting it diagnolly. If the fillets are thick slightly pound them with amullet.
Using a Mortar and pestle pound chillies, garlic and ginger untill it forms a paste.
In a mixing bowl add lime juice, soya sauce, brown sugar, coriander, garlic chilli paste and mix together.
Add the chicken to the marinade and marinate chicken for atleast 3 hours.
Heat a cast iron pan or griddle pan and drizzle some oil. Cook chicken for 5-7 minutes on each side or untill it reaches 165° internally.
Sprinkle some freshly chopped coriander and chillies. Serve with rice or salad.
