Chilli Lime Chicken

Juicy and tender Chicken marinated in chili and lime, grilled to perfection. Chilli Lime Chicken is a quick and easy recipe which is full of flavour.

Ingredients
  

  • 2 Breast Fillets
  • 1/4 cup Lime Juice
  • 2-3 Red Chillies
  • 4-5 Garlic Cloves
  • 1 inch Ginger Piece
  • 2 tbsp Soya Sauce
  • 1 tbsp Brown Sugar
  • 2 tbsp Coriander/cilantro
  • 3 tbsp Oil
  • Salt (optional)

Instructions
 

  • Split chicken into half by cutting it diagnolly. If the fillets are thick slightly pound them with amullet.
  • Using a Mortar and pestle pound chillies, garlic and ginger untill it forms a paste.
  • In a mixing bowl add lime juice, soya sauce, brown sugar, coriander, garlic chilli paste and mix together.
  • Add the chicken to the marinade and marinate chicken for atleast 3 hours.
  • Heat a cast iron pan or griddle pan and drizzle some oil. Cook chicken for 5-7 minutes on each side or untill it reaches 165° internally.
  • Sprinkle some freshly chopped coriander and chillies. Serve with rice or salad.
