Chickpea Salad
Chickpeas combined with cucumbers, capsicum, creamy avocados and feta tossed in an easy homemade lemon dressing.

- 400 g Canned Chickpea
- ½ cup Capsicum
- 1 Medium Cucumber
- ¼ cup Red onion Chopped
- 1 Medium Tomatoe Deseeded and chopped
- ¼ cup Crumbled Feta Cheese
- ¼ cup Finely chopped Parsley/coriander
- 1 Medium Avocado chopped
Dressing
- 3 tbsp Lemon Juice
- 2 tbsp Olive Oil
- ½ tsp Oregano
- Salt and Pepper to taste
In a bowl add the salad ingredients except Feta cheese.
Combine dressing ingredients in a bottle or empty jar and shake until well combined.
Pour the dressing over the salad and toss to mix. Sprinkle crumbled feta over and serve immediately.
