In a blender or grinder put mint, coriander, chillies, garlic, ginger, lemon juice and cashews. Process untill a smooth paste is formed.
Add the green paste to chicken along with yoghurt and spices. Mix well and cover. Allow it to marinate for couple of hrs atleast.
Thread the pieces into metal or wooden skewers. Heat a grill pan and drizzle some oil. Cook chicken for 4-5 mins on each side. Brush a little bit of oil to prevent chicken from drying.You can also cook chicken in airfryer or oven. Bake them for 15 minutes while turning them over once.
To give chicken skewers a smoky charcoal flavour, heat a piece of charcoal on fire. Put chicken in pot or dish. Put a little piece of folded aluminum foil in the middle. Put heated coal piece on foil and drizzle a drop of oil. Cover the dish or pot with a lid for 5 minutes. Discard the charcoal after this.
Serve it along with mint yoghurt, store bought parathas or wraps/flat bread. Garnish with fresh coriander, lemon wedges and onion rings.
