Lamingtons are an Aussie iconic. They are made up of a light and airy sponge cake, dipped in chocolate glaze and rolled in desiccated coconut. They’re usually enjoyed with a hot cuppa. You can also eat them with some cream and jam !
How to Make Lamingtons
The recipe for lamingtons is very simple. Yes I can say this now. A little confession, I somehow thought lamingtons are difficult to make and it took me long time to attempt making them. But since I have done them I think its easier than many other baking recipes.
Making Lamingtons is a 2 step recipe – first bake a sponge cake and then dip it in chocolate glaze and finally roll it in desiccated coconut.
To make Sponge we require plain flour, baking powder, caster sugar, butter, milk and eggs. Begin with creaming butter and sugar until creamy and then add eggs. Add sifted flour and milk and gently fold the mixture.
Once the cake is baked, the second step is to dip it in the glaze.The glaze is made from Icing sugar, cocoa powder, hot water and butter. Just combine all these together and whisk.
Once cake is cooled down its cut into squares. Dip it in the glaze and roll it into desiccated coconut.
TIPS FOR MAKING LAMINGTON
1.As its always said with sponge cakes, Be Gentle, don’t mix hard, this makes mixture lose the air and results in a flat and dense cake. Gently fold in the flour.
2.Make sure you grease the pan and grease the baking paper as well. The sponge tends to stick so greasing will make sure that sponge comes out without breaking.
3.Dont glaze fresh cake as its crumbly and will break. You can either make the sponge a day ahead or put it in the freezer untill its firm.
4. Don’t add all of the coconut at once in the tray. As you roll the sponge in the coconut it gets clumpy and discoloured from glaze drippings.
5.Use 2 forks or tongs, one to dip in the glaze and other to roll it in coconut.

Storing and Freezing Lamingtons
Lamingtons are really good to store for longer time. Chocolate coating prevents sponge from getting dried out. They can easily stored in air tight container for a week.
They can also be frozen. Just thaw them when ready to consume.

Classic Lamingtons
Ingredients
- 1¾ cup Plain Flour
- 3 tsp Baking Powder
- 125 g Softened Butter
- 3 Eggs
- 1 cup Caster Sugar
- ½ cup Milk
- 2 cups Desiccated coconut
Chocolate Glaze
- 3 Cups Icing Sugar
- ¼ Cup Cocoa Powder
- 1 Tbsp Butter
- ½ Cup Boiling Water
Instructions
- Preheat oven to 180°C/160°C fan-forced. Grease a 3cm-deep, 20cm x 30cm pan. Line with baking paper. Grease the baking paper as well.
- Using an electric mixer, beat butter, sugar and vanilla until light and fluffy.
- Add eggs one at a time. Mixing well after each addition.
- Sift flour and baking powder. Add half of the flour and half the milk and gently fold it in butter mixture. Add remaining half of the flour and milk and combine.
- Pour the mixture into the prepared pan and level it. Bake it in the oven until light golden and a skewer inserted in centre comes out clean.
- Allow the sponge to cool down before turning it out on wire rack.
- Cover the sponge and leave it overnight or put it in the freezer for an hour.
- Make icing: Combine icing sugar and cocoa into a bowl. Add butter and boiling water. Stir until smooth.
- Cut cake into small squares. Dip them in glaze first using fork or tongs. Roll it in coconut and place them over wire rack.
- Once they are bit dry, the lamingtons are ready to eat.
