Moist and delicious chicken marinated in chilli and lime and grilled to perfection. Chilli Lime chicken is full of flavour with Citrus hint from limes, spice from chillies and aroma from corriander and garlic. Whether its a quick weeknight meal or summer bbq, this recipe wont disappoint.
How to Make Chilli Lime Chicken
For chicken I used skinless breast fillets, you can also use thigh fillets. This recipe works well with boneless chicken but if you prefer meat with bone you can use chicken thighs.
The ingredients for marinade are:
- Lime Juice is essential ingredient of the marinade. Freshly squeezed lime juice works the best as it has a beautiful fresh flavour and aroma. If you really don’t have limes, swap them for fresh lemons.
- Red Chilles – i used fresh serrano red chillies. Depending on your spice preference you can use milder type of chilies
- Coriander/Cilantro brings the whole marinade together as it pairs really well with garlic and lime. You can swap it with parsley if you aren’t a fan or coriander/cilantro.
- Garlic & Ginger adds a wonderful flavour to the chicken.
- Brown Sugar helps to balance the acidity of lime juice and balances the spice of chilies. It also gives a nice caramalisation to chicken. You can also use honey as an alternate.
- Soya Sauce adds extra depth to the flavour
Allow the chicken to get marinated for atleast couple of hours. For best results marinate overnight but avoid marinating it more than 24 hours because the lime juice will start to break down the chicken and make it mushy in texture .
Chicken can be cooked on outdoor bbq/grill or on stovetop, in a pan or grill pan. Cook chicken for 5-7 minutes on each side until it get nice colour/char on the outside and the internal temperature reaches 165F.

This chilli lime chicken is so versatile and can be paired with anything. It can be served with plain steamed rice or cauliflower rice. Its perfect for salads, just add the stripped chicken to your favourite greens. You can also add it to wraps and burritos.

Ingredients
- 2 Breast Fillets
- 1/4 cup Lime Juice
- 2-3 Red Chillies
- 4-5 Garlic Cloves
- 1 inch Ginger Piece
- 2 tbsp Soya Sauce
- 1 tbsp Brown Sugar
- 2 tbsp Coriander/cilantro
- 3 tbsp Oil
- Salt (optional)
Instructions
- Split chicken into half by cutting it diagnolly. If the fillets are thick slightly pound them with amullet.
- Using a Mortar and pestle pound chillies, garlic and ginger untill it forms a paste.
- In a mixing bowl add lime juice, soya sauce, brown sugar, coriander, garlic chilli paste and mix together.
- Add the chicken to the marinade and marinate chicken for atleast 3 hours.
- Heat a cast iron pan or griddle pan and drizzle some oil. Cook chicken for 5-7 minutes on each side or untill it reaches 165° internally.
- Sprinkle some freshly chopped coriander and chillies. Serve with rice or salad.
