A classic Mexican recipe with seasoned chicken and tossed with sautéed bell peppers ( capsicum) and onions, served with warm tortillas. Chicken Fajitas is a quick weeknight meal, gets ready in no time and is an absolute family favourite. And the left overs make perfect lunch for next day.

All you need is chicken, bell pepper, onion, lime juice and spices (fajita seasoning), plus tortillas and your favorite toppings to serve. Everything is cooked in one pan and gets ready in less than 30 minute.
Chicken breast or Thigh fillets ? Either works for this recipe, it really your personal choice.
I used green and red bell peppers (or capsicums) . You can also add yellow or orange or use whatever colours you can find in season .

You can buy premade fajita seasoning from stores. But making one at home is incredibly easy and it definitely taste better. You can always keep some stored in air tight jar for later use. Here’s are the spices you’ll need:
- Crushed red Chilli or Red chilli powder
- Ground Cumin
- Paprika
- Oregano
- Salt
- Pepper
HOW TO MAKE CHICKEN FAJITAS
- Season the chicken. Sprinkle the fajita seasoning on chicken strips.
- Cook the chicken. Heat a large skillet over medium heat and drizzle some olive oil or any other neutral tasting oil. Cook until chicken is cooked and gets nice golden colour. You can either remove the chicken from the pan or if your pan is bigger move chicken to one side .
- Sauté the bell peppers and onion. Sauté them in the same skillet over medium heat for a few minutes until caramelized.
- Mix together. mix everything together.
- Wrap it up. Serve immediately with tortillas and extra toppings of your choice.
TOPPINGS FOR CHICKEN FAJITAS
You can choose to have fajitas without toppings but adding them takes it to another level. You can choose from sour cream, jalapenos, cheese or avocado. And Fajitas don’t have to be served in tortillas only, you can make a fajita bowl adding some rice, greens, black beans, sweet corn and avocado. Or omit rice and make a fajita salad.
Can you prepare Chicken Fajitas in advance ?
This is a great recipe for meal prepping and preparing in advance. The sautéed chicken and vegetables can be stored in the fridge for up to 5 days . Reheat before adding to a tortilla and assemble with toppings.

Chicken Fajitas
Ingredients
- 500 g Boneless Chicken
- 2-3 Capsicum ( Bell Pepper) Green, red or yellow
- 1 Onion
- 1 tsp Salt
- 1 tsp Red Chilli Powder or Crushed red chilli
- ½ tsp Paprika
- 1 tsp Cumin Powder
- ¼ tsp Black pepper
- 1 tsp Oregano
- 3 tbsp Lemon Juice
- 2 tbsp Oil
- Tortillas to serve
- Sour Cream, avocadoes and Jalapeños Optional
Instructions
- Mix all spices together to make fajita seasoning.
- Cut chicken in strips and add spices along with 2 tbsp of lemon juice. Mix and set aside.
- Thinly slice capsicums and onions.
- heat oil in a pan or skillet. Add chicken and cook while turning it over regularly.
- Move chicken to the side and add little more oil on empty side . Add capsicums and onions. Sautee them. ( if your skillet is small, take chicken out and then Sautee peppers)
- Mix chicken along with onions and peppers . Add the remaining 1 tbsp of lemon juice.
- Serve on warm tortillas with spoonful of sour cream and jalapenos. Or choose from your favourite toppings.
