Chicken Chow mein is one of the all time favourite noodle dish and probably the most popular takeout. Tender pieces of chicken breast with combination of chopped vegetables like carrots, cabbage, green onions and chewy noodles coated in sauce. Its quick and easy, perfect for weeknight dinner.
How to make Chow mein ?
There are 4 elements of Chow mein, noodles, vegetable, protein and sauce.
The ingredients required for chicken chow mein are:
Protein – If you are using Chicken, thigh fillet is better option because its juicy but you can use breast fillet too. Alternatives to chicken are diced beef, prawns or even ground meat ( chicken, beef or turkey) can be used too.
Vegetables – cabbage, spring onions and carrots are must. I added some capsicum too. You can add bean sprouts as well.
Sauce brings the whole chow mein together. I used soya sauce, oyster sauce, vinegar, sugar and cornflour.
What type of Noodles to use ?
Chow mein is made with thin noodles. You can find them at Asian Grocery Stores or at supermarket. You can even use instant noodles. Egg noodles work too and if nothing use thin spaghetti. I used the ones below, they just need to be soaked in boiling water for 7 – 10 minutes. They are available at Woolworths (in Australia) in Asian Grocery section.

Chicken Chow Mein
Ingredients
- 200 g boneless skinless chicken breast
- 450 g Chow Mein Noodles See Notes
- 1 cup green cabbage thinly sliced
- 1 cup Carrot Julienned
- 1 cup Green Onion chopped in 2 inch pieces
- ½ cup Capsicum
- 1 tsp Chopped Garlic
- 1 tbsp Oil
Sauce
- 2 tbsp Soya Sauce
- 2 tbsp Oyster Sauce
- 1 tsp Vinegar
- 1 tbsp Brown Sugar
- ½ tsp White Pepper
- 1 tbsp Cornflour
Instructions
- Mix all the sauce ingredients and put aside.
- Prepare noodles according to the package instructions.
- Heat oil in a wok. Add garlic and fry for a minute. Add chicken and fry untill it changes colour.
- Add cabbage, carrots and capsicum and toss them. Add noodles and pour prepared sauce. Toss and combine. Lastly add spring onions.
- Serve immediately.
Notes
- Use thin noodles. Alternatives to chow mein noodles are egg noodles, instant noodles or even thin spaghetti.
