Rich and creamy Sheer Khurma is an essential Eid dessert . This vermicelli dessert is mildly sweet aromatic, filled with lots of nuts, raisins and dates!

Sheer Khurma is an essential for Eid. As far as I remember its been an Eid ritual in my home. My mum use to make it every Eid and I continued this tradition in my home. Eid festivities are incomplete without it. Having said that you can completely make it anytime of the year, without waiting for Eid.

Ingredients For Sheer Khurma

It doesn’t require any complicated ingredients.

  • Milk – Preferably full cream milk, it wouldn’t recommend low fat milk as you don’t get creamy texture.
  • Vermicelli – thin vermicelli are required.
  • Dates – preferably bit firm ones, slice them thinly.
  • Almonds – thinly cut.
  • Raisins
  • Sugar – white or raw sugar
  • Ghee – is essential, it gives beautiful aroma.
  • Cardamom – for flavour and aroma.

You can also add other nuts like cashews and pistachios. Some people also like shaved coconut as well.

How To Make Sheer Khurma

Begin with boiling milk and cardamom. Once it boiling turn the heat low. While milk is simmering, in a pan add ghee and toss raisins, dates and almonds for a minute. Take them out and set aside. In the same pan add more ghee and toss vermicelli for a minute until they are little golden. Take them out and set aside as well. Add sugar in the milk and continue to simmer on high flame.

I prefer mildly sweet sheer khurma and don’t add too much sugar. The dates also add sweetness to it so begin with add little sugar. Taste test it and add more according to your taste.

Lastly add vermicelli and nuts. Continue to cook for around 10 mins by this time vermicelli will be cooked and Sheer khurma will have thickened.

How thick it should be is a personal choice. Usually Sheer Khurma is a bit runny not as thick as Kheer which is more like pudding consistency.

Serving & Storing Sheer Khurma

It is usually served warm or you can also serve at room temperature.

It can be stored in the refrigerator for almost 2-3 days, in an airtight container. You can heat it over stove top on medium heat or in microwave. It might be thickened, then add some more milk while heating.

Sheer Khurma

Ingredients
  

  • 4 cups Full Cream Milk
  • ½ cup Sugar See Notes
  • 2-3 Cardamoms
  • 2 tbsp Ghee
  • ½ cup Vermicelli
  • 3-4 Dates ( Sliced Thinly)
  • ¼ cup Thinly Sliced Almonds
  • 2 tbsp Raisins
  • Extra Almonds and Pistachios for Garnish

Instructions
 

  • In a pot or sauce pan pour milk along with cardamom and bring it to boil. Once its boiling turn the heat very low and allow it to simmer.
  • In a separate pan add 1 tbsp ghee and melt it. Toss raisins, dates and almonds for a minute. Take them out and set aside.
  • In the same pan add remaining ghee and fry vermicelli for couple of minutes. It will get light golden. Keep the heat very low to avoid burning them. Take them out and set aside.
  • Add sugar in the milk and cook on high heat until its slightly thickened. Add Vermicelli and nuts etc. in the milk. Continue to simmer until vermicelli is cooked through. The consistency is personal choice. The longer you cook it will keep getting thick.
  • Put the sheer khurma in serving dish and garnish with slivered almonds, pistachios and rose petals. Serve it warm or at room temperature.

Notes

  • How sweet you want Sheer khurma is your personal choice. You can start with less amount and add more after taste testing.
