Chewy, rich, and flavorful blondies are an indulgent, hard to resist dessert. These easy chocolate chunk blondies are rich, soft, chewy bars with brown sugar, hint of vanilla, and chocolate bits. They are quick and easy to whip and are surely going to please.
What is a Blondie?
Blondies are brownies without chocolate. They are made without cocoa powder and chocolate. They are made using brown sugar which gives it a rich distinctive flavour. In terms of texture blondies are slightly different to brownies. Blondies are supposed to be dense and chewy as compared to brownies, which are more cakey and fluffy.
How to make Blondies?
The ingredients required for chocolate chunk blondies are:
Melted butter makes these blondies rich and gooey. I use unsalted butter but I added a bit of salt separately.
Brown sugar is essential for a rich caramel like flavour. Preferably use dark brown sugar as it has more deeper flavour.
Egg gives structure, makes the bars tender. With no baking powder used egg helps brownies to rise slightly.
Vanilla extract and salt are also essential. A bit of salt balances the brown sugar and it gives wonderful flavour.
Plain flour / All Purpose Flour is used for blondies. Be sure to measure properly.
Chocolate – I used milk chocolate chopped into chunks. You can also use dark chocolate or even swap it with chocolate chips.
In a bowl combine flour, bicarb soda and salt. In a separate bowl mix melted butter, brown sugar, vanilla and eggs. Add flour and mix until batter is smooth. Stir in the chocolate chunks.
The blondies take about 25 minutes to bake. It’s important not to overbake them as they turn hard. They are ready to come out of the oven when they look just almost done. They continue to bake while they are cooling down. So to make sure you take them out when they are moist and gooey in the middle middle and the edges look browned, but the middle looks a little underdone.

Variations
You can use this recipe as a base and swap milk chocolate with white or dark chocolate. You can also add nuts like pecans, walnuts or macadamias. You can also add a tablespoon of coffee powder to give it a rich flavour.
How to Store and Freeze Blondies
Blondies can be stored in an airtight container at room temperature. They will keep for about a week.
To freeze, wrap the sliced blondies in plastic wrap, then transfer to an airtight container or freezer bag. Freeze for up to three months. Thaw at room temperature before consuming.

Ingredients
- 300 g (2½ Cups) Plain Flour / All purpose Flour
- 170 g Melted Butter
- 1 tsp Baking Soda
- 1 tsp Salt
- 200 g (1 Cup) Brown Sugar
- 2 Eggs
- 1 tbsp Vanilla Essence
- 1 cup Milk Chocolate Chopped into Chunks
Instructions
- Preheat oven to 180°C and prepare a 8 x 8 inch pan lined with parchment paper.
- In a bowl combine flour, salt and bicarb soda, set aside.
- In a mixing bowl add melted butter, eggs ,brown sugar and vanilla essence and mix them using a whisk.
- Add flour and mix until everything is well combined. Stir in the chopped chocolate chunks.
- Pour the mixture in the prepared tin and bake for 25 mins until the edges are firm.
- Allow them to cool on the wire rack and cut them into squares.
