This Alfredo chicken pasta is an indulgent comfort food. Crispy golden seared chicken is served with fettucine tossed creamy garlic parmesan Alfredo sauce.
Alfredo is a creamy, garlicky sauce made from butter and Parmigiano-Reggiano cheese. Chicken Alfredo pasta makes a quick dinner that can make a perfect weeknight dinner and gets ready in under 30 minutes.

Chicken Alfredo is one the most effortless dish and requires minimum ingredients. Most of the ingredients for Alfredo pasta will probably will be already in your kitchen.
- Cream – you can use Pouring cream or double (heavy) cream in this recipe or reduced fat cream, if you are watching your calories.
- Parmesan cheese – Powdered parmesan doesn’t work with this recipe. Use freshly grated parmesan cheese, it enhances the flavour and results in smooth flavoursome sauce.
- Chicken – breast fillets work best. You can either butterfly it or cut in small cubes.
- Garlic – freshly minced garlic. Avoid garlic paste as its burns and ruins the colour and taste of sauce.
- Pasta – Traditionally fettucine is used but you can use any long or short pasta.
Bit of multitasking is required to cook this pasta, to ensure that pasta, sauce and chicken are done and ready in around same time.
Begin with boiling the pasta in a large pot of salted water. While pasta is cooking prepare chicken and cook it in a pan until its golden and crispy.
You can use chicken fillets butterflied or small chicken cubes. I personally prefer cooking the fillet and slicing it later. sprinkle salt, black pepper, oregano and paprika on both sides of chicken. Grill it in the pan until its golden on both sides and cooked through.
Use the same pan to prepare the sauce. Toss the pasta in prepared sauce. You can add the chicken and mix or serve it on the top of pasta.

What to Serve with Alfredo Chicken Pasta ?
I love to serve this pasta with garlic bread. You can also pair it with some light salad. steamed vegetables like broccoli or asparagus also go well with Alfredo Pasta.
Can This Be Made Ahead?
Alfredo sauce is best made and consumed when fresh. Therefore, you can’t make the sauce ahead. You can prepare chicken and boil the pasta, when ready to serve prepare the pasta and toss it in the freshly prepared sauce.

Ingredients
- 375 g Fettucine Pasta
- 500 g Chicken Breast Fillet
- 1 tbsp Cracked Black Pepper
- 1 tbsp Salt
- 1 tsp Paprika
- 1 tsp Oregano
- 1 tbsp oil
- Parsley for Garnish
Sauce
- 25 g Butter
- 1 tbsp Garlic (Minced)
- 1 cup Mushrooms Sliced
- 250 ml Cream
- Salt to Taste
- ½ Tsp Cracked Black pepper
- ½ cup Parmesan
Instructions
- Boil Water with salt and add pasta. Cook untill pasta is cooked. Drain and set aside.
- While pasta is cooking, prepare chicken by splitting it into half. Sprinkle black pepper, salt, oregano and paprika on each side.
- In a pan heat oil and cook chicken untill golden on each side. Set aside to rest.
- In the same pan melt butter. Add garlic and cook for a minute. Add Mushrooms and sauté them. Turn the heat low and add cream. Allow it to simmer. Then add parmesan. Mix until the cheese melts.
- Add salt and pepper to the sauce. Once is boiling, add pasta and toss it in the sauce.
- Cut chicken in the strips, mix it into the pasta or serve it on top of pasta.
- Garnish with chopped parsley and grated fresh parmesan. Serve immediately.
