Beef Stroganoff is classic Russian dish made with tender beef, smothered in a creamy mushroom sauce. It is a quick and easy mid week meal.

The most important thing is to choose the right cut of beef that cooks quickly without being chewy. The best type of steak would be sirloin, scotch fillet or Ribeye .
Use a skillet or cast iron to cook beef strips untill slightly browned. Make sure you use the same pan for cooking the sauce. The juices and fat that’s stuck on the pan gives amazing flavour and colour to the sauce. Sautee onions and add mushrooms too. You can use any mushroom, button , portabella or white. I used flat white mushrooms.To thicken the gravy plain flour is used and some stock. You can use either chicken or beef stock.
There are so many different variations of Stroganoff some use Sour cream and some use double cream or light cream too. I prefer sour cream. I also added bit of garlic and mustard, also little bit of paprika, gives the sauce amazing flavour.
WHAT TO SERVE WITH STROGANOFF?
Traditionally Stroganoff is served with mashed potatoes or egg noodles. The other option include fettuccine and sometimes steamed rice. If you are looking for low calorie options zoodles ( zucchini noodles) or cauliflower rice.

Beef Stroganoff
Ingredients
- 500 g Beef Steak (cut in strips)
- 1 tsp Garlic paste
- 1 medium Onion ( Sliced)
- 2 cups Mushrooms ( Sliced)
- 2 tbsp Plain Flour
- ½ cup Chicken or beef stock
- ¼ cup Sour cream See Notes
- 1½ tsp Salt
- 1 tsp Paprika
- 1 tsp Mustard
- 1 tsp Cracked Black pepper
- 1 tbsp Butter
- 2 tbsp oil
Instructions
- Heat a pan or skillet untill hot. Cook beef strips while turning, untill slightly browned. Take them out and set aside
- In the same pan add 1 tablespoon of oil. Fry garlic and add onions. Cook them untill soft.
- Add butter and mushrooms to. Stir around and cook for 2 -3 minutes.
- Add flour and mix, cook for couple of minutes and then pour in the stock. Stir untill the sauce becomes thick.
- Add sour cream and mix. Put salt, paprika, black pepper and mustard. Simmer the sauce untill it starts to bubble. Add beef strips and stir them in.
- Garnish with parsley and serve with mash potatoes or noodles of your choice.
Notes
- Full fat cream or low fat(light) cream can be used as well.
